The keyword for which I'm ranked 4th in organic results, google wants me to bid at least $5.00/click to activate my adwords ads.

Anyone else seen similar results?

if you see $5,that means your quality score is low.
improve your score.

it doesn't matter if you rank for that keyword.
rewording your ad could drop the min. bid way down.

Weird, the exact same copy/etc used to get me thousands of clicks at 0.01 CPC. Then I paused the campaign and now on reactivating it, this happens. That seems a little odd to me.

2GrandArcade is right. Adwords work like this: the higher CTR you have, the more relevant adwords think your ad is, and the less you have to pay. if you get something like 0.01% CTR, then the ad price will skyrocket, but then slowly work its way down again until your ad get shown again and the price go up again.

The only solution is to get a higher CTR through modifying your ad and a better geo locational targetting.
